Pan Fried Cod Fish
with Orzo & Lemon Cream

This recipe is dedicated to James & Oliver…

This is a bit different post then the rest of my blog posts. There are two reasons behind. Here is why…

Firstly, It is an easy but a very delicious dish of mine (with a slight twist with the vegetables) which is the best seller right now at the restaurant. I know many people come and eat this 4-5 times in a row which makes me feel satisfied as a chef.

I have created this dish 1 year ago for some other occasion. Then all the people trying suggested me to put it in the menu. I have changed it a lil bit, played with different vegetables and then finally put it on the menu and as expected it was loved since day one.

If you know my story about this blog you would know that I do not publish recipes which I used for the restaurant. Instead, I create mostly something totally new. So why I am having this dish on the blog takes us to the second reason.

When I first cooked this dish, a very good friends of mine, James tasted it and he absolutely loved it or maybe he was just being kind 😀 Just kidding. Anyway, he even asked me for the recipe. I promised him that I would but I completely forgot about it. Then he moved to another country we couldn’t talk as much and I never did sent the recipe.

Last week he texted me after a long while to give me the great news that his little cutie son Oliver was born. Then we talked about life, me and the blog a lil bit then he reminded me that I was supposed to give him the recipe. That’s how I decided to cook this amazing dish once again for the two very special men out there (Even though they cannot taste it) 🙂

For Orzo;

  • 0,5 cup Orzo
  • 4 pcs Shallots Chopped
  • 2 Cloves Garlic Fine Chopped
  • 1 medium pcs Carrots Diced
  • 1 Tbsp Chives Chopped
  • 1 Tbsp Parsley Chopped
  • 2 tsp Olive Oil
  • Salt & Pepper

For Lemon Cream;

  • 1 Cup Cooking Cream
  • 1 pcs Lemon (zest & juice)
  • 1 Tbsp Chives Chopped
  • 1 Tbsp Parsley Chopped
  • Salt & Pepper

For Cod Fish;

  • 2 portion Cod fish fillet (220gr /each) Skin off
  • 2 tsp Olive oil
  • 2 Tbsp Butter
  • Salt & Pepper

For Orzo;

  1. Sautée orzo with olive oil until it has a nice golden brown color.

  2. Add chopped onion and sweat until fragrant then add garlic and sweat.

  3. Add carrots and Sautée. (I used baby heirloom carrots but you can easily use regular carrots.)

  4. Cover orzo with stock of choice, add seasoning and cook on medium low heat until al dente. (Avoid adding too much stock in the beginning as we will not strain this pasta. You may add extra if needed)

  5. Add chopped chives & parsley just before serving so they don't die.

  6. Keep on the side until plating.

For Lemon Cream;

  1. In a small sauce pot put cream and add zest from one whole lemon, bring it to boil.

  2. Simmer 5-10 minutes or until desired thickness.

  3. Turn off the heat and add lemon juice, salt & pepper.

  4. Add chopped chives & parsley just before serving.

  5. Keep on the side until plating.

For Plating;

  1. Nicely season cod fish fillets with salt and pepper.

  2. On a high heat in a frying pan until you get a golden brown crust. (Make sure you keep the high heat until you have the crust otherwise fish will release water and you will not have desired crust) After the crust built on both sides, if it is still raw on the inside you can lover the heat and keep cooking.)

  3. Last couple minutes on a medium low heat add butter and baste.

  4. Put orzo on the plate, top with cod fish and serve with lemon cream sauce on top.
