‘Beef pasta’ in Turkish words ‘Kiymali Makarna’. This recipe is dedicated to Latif And Apo.
It’s a very typical Turkish home-cooked dish. Beef pasta and yogurt sauce. If you’re born in 80’s and your mom works, you definitely have a good opinion about how this dish tastes like. Also, this beef pasta is most probably the only dish you could be able to cook when you start cooking. Super easy, super quick pasta dish yet it’s extremely yummy. You don’t need to worry about dinner even if you have half an hour.
Last week one of my old friends found me on Facebook. It’s been a long time we had no contact. I was so surprised and happy getting in touch again. Then a couple of days after he created a group of three of us. My most favorite high school friend. Apo, Latif and myself. We have had a hilarious chat as we used to do. Of course, they needed to make jokes about me being a chef. Old friends are somehow always there even though you don’t see them they find you and all feels the same. Treasures of our childhood.
Then Latif, in particular, asked me if I can make “beef pasta but not bolognese?” he said. He goes “I wonder touch of a chef. I, of course, took the challenge. I would never say no anyway. You understand what I mean. After the conversation, I asked myself what the hell am I supposed to do with 3 ingredients. I was in trouble. Couldn’t stop thinking about beef pasta and how to do it in my own way but I could think of nothing.
After a mentally and physically tiring day, I was at work having a tea and resting a little bit. All started coming along. I couldn’t stop. Saw this plate in my mind. I was just smiling with joy. Beef pasta saved my day and made my day too 🙂
Crispy Beef Pasta with Parsley Yogurt Sauce
For Crispy Beef;
- 250 gr Minced Beef
- 30 gr Butter
- Salt & Pepper
For Yogurt Sauce;
- 250 gr Yogurt
- 30 gr Parsley
- 5 gr Garlic
- Salt & Pepper
- 200 gr Pasta of your choice
- Crispy Beef
- Yogurt Sauce
Cook your pasta. Keep on the side until use.
In a smoking hot saute pan saute minced beef without oil or butter stirring constantly.
It will get dryer every minute.
When you have them crispy and golden brown add butter or you can add pork crackling if you want. It would taste good.
Add cooked pasta and mix well.
On a blender or with a hand blender bland 1/4 cup of the yogurt, parsley, and garlic until smooth.
Then hand mix the rest of the yogurt with salt & pepper and add parsley yogurt to the mix.
If you bland all of the yogurts in the blender it will be too watery.
Serve parsley yogurt over beef pasta or on the side.
