Baked Quinoa Pudding

Living in Dubai is sometimes really difficult. You want to find local food? No chance. Well, not if you want some dates. Dates everywhere. Fresh during summer, dried the entire year. I was not really using dates before I moved here but now I use it a lot. They inspire me. Love you dates 🙂

So as you would already understood dates are going to be our sweetener on this recipe. Actually it is not only sweetener, but also it gives a texture after being blended. Caramelizes very nicely when baked as well. So it is a winner for your breakfast or anytime you want some sweets in your life …

This pudding is pretty easy, you can prep a big batch and freeze if you want to and bake when needed.

Do we need a lot of ingredients? Nope! Not at all….

Ingredients

  • 50 gr White Quinoa
  • 300 mb Almond milk
  • 100 gr Dates
  • 1 pinch Cinnamon
  • 1/4 tbsp Vanilla extract essence
  • 10 gr Almonds
  • 25 gr Dried apricot optional
  • 10 gr Walnuts crushed
  • Sunflower seeds & Pumpkin seeds for garnish

Instructions

  1. Wash and strain quinoa and put in a pot with cold water and cook until tender.

  2. At the meantime deseed dates chop it roughly and blend it with almond milk.

  3. Once quinoa is cooked strain and add all ingredients and date puree and simmer until it gets the thickness you like. I like mine quite thick so I simmered about 8 -10 minutes. If you like it lose then you might have 5 min or so. Keep checking while stirring.

  4. Bake them 25-30 minutes in 200°C oven

  5. Or Keep it in the freezer until next time and bake after defrosted

  6. Serve warm or cold
